Ingredients

  • 1 cup red lentils, rinsed
  • 1 small onion finely chopped
  • 1 carrot, diced
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 4 cups vegetable or chicken broth
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • Lemon wedges for serving

Cooking Instructions

  1. Heat olive oil in a pot, sauté onion and carrot until soft.
  2. Add tomato paste and paprika, cook 1 min.
  3. Add lentils and broth, bring to a boil.
  4. Reduce heat and simmer 15–20 mins until lentils are soft.
  5. Blend the soup until smooth (optional). Season with salt and pepper.
  6. Serve hot with a squeeze of lemon.
